  • 1 cup cherry tomatoes (halved)
  • 1 cucumber (diced)
  • 1/4 small red onion (thinly sliced)
  • 1/4 cup fresh cilantro or parsley (chopped)
  • 1 tablespoon extra virgin olive oil
  • 1 tablespoon lime juice (freshly squeezed)
  • 1/2 teaspoon salt (adjust to taste)
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon smoked paprika (optional, for extra depth of flavor)
  • 1/2 avocado (diced, optional for creaminess)


Instructions:


Step 1: Grill the Corn

  1. Preheat your grill to medium heat.
  2. Remove the husk and silk from the corn.
  3. Brush the corn lightly with olive oil and grill for about 10 minutes, turning occasionally, until slightly charred.
  4. Once done, let it cool slightly before cutting the kernels off the cob.

Step 2: Prepare the Salad

  1. In a large bowl, combine the grilled corn kernels, cherry tomatoes, diced cucumber, and sliced red onion.
  2. Add the chopped cilantro or parsley for freshness.

Step 3: Make the Dressing

  1. In a small bowl, whisk together olive oil, lime juice, salt, black pepper, and smoked paprika (if using).
  2. Pour the dressing over the salad and toss gently to combine.

Step 4: Serve & Enjoy!

  • If using, add diced avocado on top for a creamy touch.
