Sweet Vegan Potato Curry Recipe With Chickpeas

Ingredients


1 tbsp coconut oil (or olive oil)
1 small onion, diced
3 garlic cloves, minced
1 tbsp fresh ginger, grated
1 tbsp curry powder
1 tsp ground cumin
½ tsp turmeric
½ tsp smoked paprika (optional, for depth)
2 medium sweet potatoes, peeled & cubed
1 can (15 oz) chickpeas, drained & rinsed
1 can (14 oz) diced tomatoes
1 can (14 oz) full-fat coconut milk
1 cup vegetable broth (or water)
1 tbsp maple syrup (balances the flavors)
Salt & black pepper, to taste
Juice of ½ lime
Fresh cilantro, for garnish


Instructions




Step 1: Sauté the Aromatics

1️⃣ Heat coconut oil in a large pot over medium heat.
2️⃣ Add the onion and sauté for 3–4 minutes until soft.
3️⃣ Stir in the garlic and ginger, cooking for another minute until fragrant.

Step 2: Build the Flavor

1️⃣ Add curry powder, cumin, turmeric, and paprika, stirring for 30 seconds to toast the spices.
2️⃣ Toss in the sweet potatoes and chickpeas, coating them in the aromatic spices.

Step 3: Simmer to Perfection

1️⃣ Pour in the diced tomatoes, coconut milk, and vegetable broth.
2️⃣ Stir in the maple syrup, season with salt & black pepper, and bring to a gentle simmer.
3️⃣ Cover and cook for 15–20 minutes, stirring occasionally, until the sweet potatoes are fork-tender.

Step 4: Finish & Serve

1️⃣ Squeeze in the lime juice for brightness.
2️⃣ Taste and adjust seasoning if needed.
3️⃣ Serve hot, garnished with fresh cilantro, over rice or with naan.
