✅ 8 slices soft sandwich bread (white or whole wheat, crusts optional)
✅ Fresh dill or microgreens, for garnish (optional)

👩🍳 Instructions
Step 1: Soak the Cashews (if making from scratch)
1️⃣ Place raw cashews in hot water and soak for at least 15 minutes (or overnight in cool water).
2️⃣ Drain and rinse before blending.
Step 2: Make the Vegan Dill Cream Cheese
1️⃣ In a high-speed blender or food processor, combine soaked cashews, lemon juice, plant-based milk, apple cider vinegar, garlic, onion powder, and salt.
2️⃣ Blend until ultra-smooth and creamy. Add a splash more milk if needed.
3️⃣ Fold in the fresh chopped dill, and chill for at least 15 minutes to let the flavors meld.
(Alternatively, mix fresh dill into a tub of your favorite store-bought vegan cream cheese.)
Step 3: Assemble the Sandwiches
1️⃣ Lay out the bread slices on a clean surface.
2️⃣ Spread a generous layer of the dill cream cheese over each slice.
3️⃣ Arrange thin cucumber slices in overlapping rows on half the slices.
4️⃣ Sprinkle with a touch of cracked black pepper for a little zing.
5️⃣ Top with the remaining slices of bread and press gently.
Step 4: Cut & Serve
1️⃣ Trim the crusts (optional for classic tea sandwich vibes).
2️⃣ Slice each sandwich into halves or quarters, depending on your presentation style.
3️⃣ Garnish with a sprig of dill or microgreens for a charming finish.
