Homemade Tuscan Vegan Gnocchi Recipe

Lauren actually fell in love with gnocchi first — she used to make it almost every Sunday when we were growing up. There’s just something magical about those soft, pillowy bites, coated in a rich, flavorful sauce, that makes everything slow down for a moment.

This Vegan Gnocchi recipe is one of our coziest go-to meals. It’s simple, satisfying, and feels like such a treat — yet it’s so easy to make from scratch! Cassidy loves tossing the fresh gnocchi with her favorite homemade marinara, while Lauren usually leans toward a creamy, dreamy vegan Alfredo sauce. No matter how you serve it, every bite tastes like comfort and home. Perfect for quiet dinners, family gatherings, or just when you need a little extra warmth on your plate.

Ingredients:

For the Gnocchi:

  • 2 large russet potatoes (peeled and cubed)
  • 1 cup all-purpose flour (or gluten-free flour)
  • 1 teaspoon salt
  • 1/4 teaspoon ground nutmeg (optional)
  • 1/2 teaspoon garlic powder (optional)
  • 1-2 tablespoons vegan butter or olive oil (for sautéing)

For the Sauce (optional):

  • Marinara sauce or vegan Alfredo sauce (Cassidy’s favorite is a classic marinara, while Lauren loves a creamy Alfredo!)


Instructions:





Cook the Potatoes:

  • Place the peeled and cubed potatoes into a large pot and cover with water. Bring it to a boil over medium-high heat, and cook the potatoes until fork-tender, about 15-20 minutes. Drain and mash the potatoes until smooth.

Prepare the Dough:

  • Once the mashed potatoes are cool enough to handle, transfer them to a large mixing bowl. Add the flour, salt, nutmeg (if using), and garlic powder (if using). Stir until the mixture starts to come together into a dough.
  • Gently knead the dough on a clean surface until it’s smooth, being careful not to overwork it. If it feels too sticky, add a little more flour — but don’t overdo it!

Shape the Gnocchi:

  • Divide the dough into 4 sections. Roll each section into a long rope, about 1/2-inch thick. Cut each rope into 1-inch pieces. Gently press each piece with a fork to create the classic gnocchi ridges.
