These Vegan Banana Pancakes are naturally sweet, soft, and incredibly easy to make. Plus, they’re made with simple ingredients you probably already have in your kitchen!

Ingredients:

  • 1 large ripe banana (mashed)
  • 1 cup all-purpose flour (or whole wheat flour for a healthier option)
  • 1 tablespoon baking powder
  • 1 tablespoon maple syrup (or sweetener of choice)
  • 3/4 cup non-dairy milk (such as almond, soy, or oat milk)
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon cinnamon (optional, but adds great flavor!)
  • 1/4 teaspoon salt
  • 1 tablespoon coconut oil (for cooking)

Optional Toppings:

  • Sliced bananas 🍌
  • Maple syrup 🍯
  • Chopped nuts 🌰
  • Dairy-free chocolate chips 🍫
  • Berries 🍓


Instructions:


Step 1: Make the Batter

  1. In a mixing bowl, mash the ripe banana until smooth.
  2. Add the non-dairy milk, maple syrup, and vanilla extract. Mix well.
  3. In another bowl, whisk together the flour, baking powder, cinnamon, and salt.
  4. Gradually add the dry ingredients to the wet mixture, stirring until just combined. Do not overmix; a few lumps are okay!

Step 2: Cook the Pancakes

  1. Heat a non-stick pan or griddle over medium heat and lightly grease with coconut oil.
  2. Pour about 1/4 cup of batter onto the pan for each pancake.
  3. Cook until bubbles form on the surface and the edges look set (about 2-3 minutes).
  4. Flip and cook for another 1-2 minutes, until golden brown.
  5. Repeat with the remaining batter.

Step 3: Serve & Enjoy!

  • Stack the pancakes on a plate and drizzle with maple syrup.
  • Add your favorite toppings like banana slices, nuts, or chocolate chips.
  • Serve warm and enjoy every fluffy bite!
