Vegan Sushi Bowls Recipe with Delicious Spicy Mayo

It’s fresh, satisfying, and packed with all the best ingredients—plus, the spicy mayo takes it to the next level.

This sushi bowl is perfect for meal prep, quick lunches, or an easy dinner. Best of all, it’s fully customizable! You can mix and match your favorite toppings to create the ultimate sushi experience—no rolling required!

Ingredients:


For the Sushi Bowl:

  • 1 cup sushi rice (or jasmine/brown rice)
  • 1 1/2 cups water
  • 1 tablespoon rice vinegar
  • 1 teaspoon sugar
  • 1/2 teaspoon salt
  • 1/2 cup shredded carrots
  • 1/2 cucumber, sliced into thin strips
  • 1/2 avocado, sliced
  • 1/2 cup edamame (cooked & shelled)
  • 1/4 cup shredded nori (or nori sheets, cut into strips)
  • 1 tablespoon sesame seeds
  • 1/4 cup chopped green onions

For the Spicy Mayo:

  • 1/4 cup vegan mayo
  • 1 teaspoon sriracha (adjust to taste)
  • 1 teaspoon soy sauce (or tamari for gluten-free)
  • 1 teaspoon lime juice

Optional Toppings:

  • Pickled ginger
  • Sliced radishes
  • Tofu (cubed and pan-fried for extra protein)
  • Extra sesame seeds


Instructions:

Step 1: Cook the Rice

  1. Rinse the sushi rice under cold water until the water runs clear.
  2. In a pot, add the rice and water. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes.
  3. Remove from heat and let it sit (covered) for another 10 minutes.
  4. In a small bowl, mix rice vinegar, sugar, and salt. Pour over the cooked rice and gently mix to combine.

Step 2: Prepare the Spicy Mayo

  1. In a small bowl, whisk together the vegan mayo, sriracha, soy sauce, and lime juice.
  2. Taste and adjust spice level as needed.



Step 3: Assemble the Sushi Bowl

  1. Divide the seasoned rice into bowls.
  2. Arrange the shredded carrots, cucumber slices, avocado, edamame, shredded nori, sesame seeds, and green onions on top of the rice.
  3. Drizzle with spicy mayo and garnish with extra toppings like pickled ginger or tofu.


Step 4: Serve & Enjoy!

  • Mix everything together for the best flavor in every bite!
