Ingredients


For the Mushrooms

16 large cremini or button mushrooms (stems removed and finely chopped)
1 tbsp olive oil
3 cloves garlic, minced
½ small onion, finely chopped
½ cup breadcrumbs (or gluten-free option)
¼ cup nutritional yeast (for a cheesy flavor)
2 tbsp fresh parsley, chopped
1 tsp dried oregano
½ tsp salt
½ tsp black pepper
¼ tsp red pepper flakes (optional, for heat)
2 tbsp vegan cream cheese (or hummus, for creaminess)

For Topping

1 tbsp olive oil
Extra breadcrumbs & nutritional yeast


Instructions

Step 1: Prepare the Mushrooms

1️⃣ Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.
2️⃣ Clean the mushrooms with a damp paper towel, remove the stems, and finely chop the stems for the filling.

Step 2: Cook the Filling

1️⃣ Heat olive oil in a pan over medium heat. Sauté the chopped mushroom stems, garlic, and onion until soft and fragrant (about 5 minutes).
2️⃣ Stir in the breadcrumbs, nutritional yeast, parsley, oregano, salt, black pepper, and red pepper flakes. Cook for another 2 minutes.
3️⃣ Remove from heat and mix in the vegan cream cheese (or hummus) until the filling is creamy and well combined.

Step 3: Stuff & Bake

1️⃣ Spoon the filling into each mushroom cap, pressing gently to pack it in.
2️⃣ Sprinkle the tops with extra breadcrumbs and nutritional yeast, then drizzle with olive oil for a crispy finish.
3️⃣ Bake for 18–20 minutes, until the mushrooms are tender and golden on top.

Step 4: Serve & Enjoy

  • Garnish with fresh parsley and serve warm. Enjoy the burst of savory, cheesy goodness in every bite!
