✅ 2 medium carrots, diced
✅ 2 celery stalks, chopped
✅ 1 zucchini, diced
✅ 1 ½ cups green beans, chopped
✅ 1 (15 oz) can diced tomatoes
✅ 1 (15 oz) can kidney beans, drained and rinsed
✅ 1 (15 oz) can cannellini beans, drained and rinsed
✅ 5 cups vegetable broth
✅ 1 cup small pasta (elbow, ditalini, or shells)
✅ 1 tsp dried oregano
✅ 1 tsp dried basil
✅ ½ tsp dried thyme
✅ ½ tsp red pepper flakes (optional)
✅ Salt & black pepper, to taste
✅ 1 cup fresh spinach or kale, chopped
✅ 1 tbsp balsamic vinegar (for depth of flavor)
For Serving
✅ Fresh parsley, chopped
✅ Vegan Parmesan cheese (optional)
✅ Crusty bread, for dipping
Instructions
Step 1: Sauté the Aromatics
1️⃣ In a large pot, heat olive oil over medium heat.
2️⃣ Add the onion, garlic, carrots, and celery. Sauté for 5 minutes, until softened and fragrant.
Step 2: Build the Flavor
1️⃣ Stir in the zucchini, green beans, diced tomatoes, kidney beans, and cannellini beans.
2️⃣ Pour in the vegetable broth, then add oregano, basil, thyme, red pepper flakes, salt, and black pepper.
3️⃣ Bring the soup to a boil, then reduce heat and let it simmer for 15 minutes.
Step 3: Cook the Pasta
1️⃣ Stir in the pasta and cook for another 10 minutes, or until the pasta is tender.
2️⃣ Add the spinach (or kale) and let it wilt into the soup.
