Instructions
1️⃣ Prepare the Cake Batter:
- Preheat your oven to 350°F (175°C). Grease and line two 8-inch cake pans with parchment paper.
- In a small bowl, combine almond milk and apple cider vinegar. Let it sit for 5 minutes to create a vegan buttermilk.
- In a large bowl, whisk together the gluten-free flour, cocoa powder, sugar, baking soda, baking powder, and salt.
2️⃣ Mix the Wet Ingredients:
- Add the vegan buttermilk, melted coconut oil, vanilla extract, and applesauce to the dry ingredients. Stir gently.
- Pour in the hot coffee and mix until just combined (don’t overmix!).
3️⃣ Bake to Perfection:
- Divide the batter evenly between the two cake pans.
- Bake for 30–35 minutes, or until a toothpick inserted in the center comes out clean.
- Let the cakes cool in the pans for 10 minutes, then transfer to a wire rack.
4️⃣ Make the Frosting:
- Beat the vegan butter until fluffy.
- Add the cocoa powder, powdered sugar, almond milk, and vanilla. Beat until smooth and creamy.
5️⃣ Assemble & Decorate:
- Once the cakes are completely cool, spread a layer of frosting on one cake.
- Place the second cake on top and frost the entire cake.
- Decorate with chocolate shavings, berries, or nuts.
