Ingredients

For the Cake

1 ½ cups gluten-free all-purpose flour (with xanthan gum)
¾ cup unsweetened cocoa powder
1 cup granulated sugar (or coconut sugar)
1 tsp baking soda
½ tsp baking powder
½ tsp salt
1 cup unsweetened almond milk (or any plant milk)
1 tbsp apple cider vinegar (helps the cake rise)
⅓ cup melted coconut oil (or vegetable oil)
2 tsp vanilla extract
½ cup unsweetened applesauce (for moisture)
½ cup hot brewed coffee (enhances chocolate flavor)

For the Chocolate Frosting

½ cup vegan butter, softened
¼ cup unsweetened cocoa powder
2 ½ cups powdered sugar
3–4 tbsp almond milk (to adjust consistency)
1 tsp vanilla extract

Optional Toppings

Vegan chocolate shavings
Fresh berries
Chopped nuts


Instructions

1️⃣ Prepare the Cake Batter:

  • Preheat your oven to 350°F (175°C). Grease and line two 8-inch cake pans with parchment paper.
  • In a small bowl, combine almond milk and apple cider vinegar. Let it sit for 5 minutes to create a vegan buttermilk.
  • In a large bowl, whisk together the gluten-free flour, cocoa powder, sugar, baking soda, baking powder, and salt.

2️⃣ Mix the Wet Ingredients:

  • Add the vegan buttermilk, melted coconut oil, vanilla extract, and applesauce to the dry ingredients. Stir gently.
  • Pour in the hot coffee and mix until just combined (don’t overmix!).

3️⃣ Bake to Perfection:

  • Divide the batter evenly between the two cake pans.
  • Bake for 30–35 minutes, or until a toothpick inserted in the center comes out clean.
  • Let the cakes cool in the pans for 10 minutes, then transfer to a wire rack.

4️⃣ Make the Frosting:

  • Beat the vegan butter until fluffy.
  • Add the cocoa powder, powdered sugar, almond milk, and vanilla. Beat until smooth and creamy.

5️⃣ Assemble & Decorate:

  • Once the cakes are completely cool, spread a layer of frosting on one cake.
  • Place the second cake on top and frost the entire cake.
  • Decorate with chocolate shavings, berries, or nuts.
