Try These RecipesIngredients
For the Brownies
✅ 1 cup shredded zucchini (finely grated & lightly packed)
✅ ½ cup unsweetened applesauce (or mashed banana for extra sweetness)
✅ ½ cup maple syrup or agave nectar
✅ 1 tsp vanilla extract
✅ ¼ cup coconut oil, melted (or any neutral oil)
✅ ¾ cup all-purpose flour (or gluten-free blend)
✅ ⅓ cup unsweetened cocoa powder
✅ ½ tsp baking soda
✅ ¼ tsp salt
✅ ½ cup dairy-free chocolate chips
Optional Toppings
✅ Extra chocolate chips (for a gooey top layer)
✅ Chopped nuts (walnuts or pecans for crunch)
✅ A dusting of cocoa powder
Instructions
1️⃣ Preheat & Prep: Preheat your oven to 350°F (175°C) and line an 8x8-inch baking pan with parchment paper.
2️⃣ Grate the Zucchini: Using a fine grater, shred the zucchini and gently squeeze out some of the moisture with a paper towel (don’t squeeze too much—you want them moist!).
3️⃣ Mix the Wet Ingredients: In a large bowl, whisk together the applesauce, maple syrup, vanilla extract, and melted coconut oil. Stir in the shredded zucchini.
4️⃣ Combine the Dry Ingredients: In a separate bowl, sift together the flour, cocoa powder, baking soda, and salt.
5️⃣ Make the Batter: Gradually fold the dry ingredients into the wet mixture until just combined. Then, gently fold in the dairy-free chocolate chips.
6️⃣ Bake to Perfection: Pour the batter into the prepared pan and spread evenly. Sprinkle extra chocolate chips on top if desired. Bake for 25–30 minutes, or until a toothpick inserted in the center comes out with a few moist crumbs (not wet batter).
7️⃣ Cool & Enjoy: Let the brownies cool completely before slicing (this helps them set into their ultra-fudgy texture!).
