  • 4 large bell peppers (any color—red, yellow, orange, or green!)
  • 1 cup cooked quinoa or rice (fluffy & filling base)
  • 1 cup cooked lentils (adds hearty texture & protein)
  • ½ cup diced tomatoes (juicy & fresh)
  • ½ cup black beans (for extra protein & fiber)
  • ¼ cup corn kernels (adds a hint of sweetness)
  • ½ onion, finely chopped (for depth of flavor)
  • 2 cloves garlic, minced (because garlic makes everything better!)
  • 1 tbsp olive oil (for sautéing)
  • 1 tsp cumin (warm, earthy spice)
  • ½ tsp smoked paprika (adds a subtle smoky kick)
  • Salt & pepper to taste
  • Fresh cilantro or parsley for garnish


How to Make These Flavorful Stuffed Peppers

1️⃣ Preheat & Prep: Preheat your oven to 375°F (190°C). Cut the tops off the bell peppers and remove the seeds.
2️⃣ Sauté the Filling: Heat olive oil in a pan, sauté onions and garlic until fragrant. Add cooked quinoa, lentils, diced tomatoes, black beans, corn, and spices. Stir and let everything blend together beautifully!
3️⃣ Stuff the Peppers: Fill each pepper generously with the mixture, packing it in so every bite is flavorful!
4️⃣ Bake Until Tender: Place stuffed peppers in a baking dish, cover with foil, and bake for 25-30 minutes. Remove the foil for the last 10 minutes for a slight char!
