- 1 block (14 oz) extra-firm tofu, pressed and drained
- 2 cloves garlic
- 2 tbsp lemon juice
- 1 tbsp olive oil
- 3 tbsp nutritional yeast
- ½ tsp salt
- ½ tsp black pepper
- 1 tsp dried basil
- 1 tsp dried oregano
- 1 cup fresh spinach, finely chopped
For the Roll-Ups:
- 8–10 lasagna noodles, cooked and drained
- 2–3 cups marinara sauce, homemade or store-bought
- Fresh basil or parsley (for garnish)
Step-by-Step Instructions
1. Make the Tofu Ricotta
1️⃣ In a food processor, crumble the tofu.
2️⃣ Add garlic, lemon juice, olive oil, nutritional yeast, salt, pepper, basil, and oregano.
3️⃣ Blend until it’s mostly smooth and ricotta-like in texture.
4️⃣ Fold in the chopped spinach by hand. Set aside.
2. Cook the Noodles
1️⃣ Bring a large pot of salted water to a boil.
2️⃣ Cook lasagna noodles according to package instructions.
3️⃣ Drain and rinse under cool water. Lay them flat on a clean towel to avoid sticking.
3. Assemble the Roll-Ups
1️⃣ Preheat oven to 375°F (190°C).
2️⃣ Spread a thin layer of marinara sauce on the bottom of a baking dish.
3️⃣ Take each lasagna noodle and spread about 2–3 tablespoons of tofu ricotta along the length.
4️⃣ Gently roll the noodle up and place seam-side down in the dish.
5️⃣ Once all roll-ups are in the dish, spoon more marinara sauce over the top.
4. Bake to Perfection
1️⃣ Cover the baking dish with foil and bake for 25 minutes.
2️⃣ Uncover and bake for an additional 10 minutes until hot and bubbly.
3️⃣ Let cool slightly before serving. Garnish with fresh basil or parsley for a pop of green.
