✅ ¾ cup (75 g) cocoa powder, sifted
✅ 1 ½ tsp baking powder
✅ 1 ½ tsp baking soda
✅ ½ tsp salt
✅ 1 ¼ cups (250 g) granulated sugar
✅ 1 cup (240 ml) dairy-free milk (soy, oat, or almond)
✅ ½ cup (120 ml) neutral oil (canola, vegetable, or melted coconut oil)
✅ 2 tsp vanilla extract
✅ 1 tbsp apple cider vinegar (helps with fluffiness)
✅ 1 cup (240 ml) hot water or coffee (coffee enhances the chocolate flavor!)
✅ 10–12 crushed Oreo cookies (for extra crunch!)
For the Cookies & Cream Frosting:
✅ 1 cup (230 g) vegan butter, softened
✅ 3 ½ cups (450 g) powdered sugar, sifted
✅ 2 tsp vanilla extract
✅ 2–3 tbsp dairy-free milk (as needed for consistency)
✅ 10 crushed Oreo cookies (for that perfect cookies & cream texture)
For Decoration:
✅ Whole Oreos for topping
✅ Crushed Oreos for the edges
Instructions
Step 1: Prepare the Cake Batter
1️⃣ Preheat oven to 350°F (175°C) and grease two 8-inch cake pans (or line with parchment).
2️⃣ In a large bowl, whisk together the flour, cocoa powder, baking powder, baking soda, salt, and sugar.
3️⃣ In another bowl, mix the dairy-free milk, oil, vanilla, and apple cider vinegar until combined.
4️⃣ Slowly pour the wet ingredients into the dry ingredients, stirring gently.
5️⃣ Add the hot water (or coffee) and mix until you get a smooth batter.
6️⃣ Fold in the crushed Oreos for extra cookies & cream flavor!
Step 2: Bake the Cake
1️⃣ Divide the batter evenly between the prepared cake pans.
2️⃣ Bake for 30–35 minutes, or until a toothpick inserted in the center comes out clean.
3️⃣ Let the cakes cool in the pans for 10 minutes, then transfer to a wire rack to cool completely.
Step 3: Make the Frosting
1️⃣ Using a hand mixer or stand mixer, beat the vegan butter until light and fluffy.
2️⃣ Gradually add the powdered sugar, mixing well.
3️⃣ Stir in the vanilla extract and dairy-free milk (as needed) for a creamy consistency.
4️⃣ Fold in the crushed Oreos, mixing until smooth.
Step 4: Assemble the Cake
1️⃣ Place one cake layer on a serving plate. Spread a generous layer of cookies & cream frosting on top.
2️⃣ Add the second cake layer and frost the top and sides evenly.
3️⃣ Decorate with whole and crushed Oreos for a stunning finish.
