For the Lava Cakes:
✅ ½ cup (120 ml) dairy-free milk (oat, almond, or soy)
✅ ½ cup (90 g) dairy-free dark chocolate, chopped
✅ ¼ cup (60 g) unsweetened applesauce (or mashed banana)
✅ ¼ cup (50 g) coconut sugar (or brown sugar)
✅ 1 tsp vanilla extract
✅ ¼ cup (30 g) gluten-free flour (or all-purpose flour if not GF)
✅ ¼ cup (25 g) cocoa powder, sifted
✅ ½ tsp baking powder
✅ Pinch of salt
For Greasing the Ramekins:
✅ 1 tbsp coconut oil or vegan butter
✅ 1 tbsp cocoa powder (for dusting)
Instructions
Step 1: Melt the Chocolate
1️⃣ Preheat your oven to 375°F (190°C).
2️⃣ Grease 2–3 small ramekins with coconut oil and dust with cocoa powder to prevent sticking.
3️⃣ In a heatproof bowl, melt the dark chocolate with dairy-free milk using a double boiler or microwave in 30-second intervals, stirring until smooth.
Step 2: Make the Batter
1️⃣ In a mixing bowl, whisk together applesauce, coconut sugar, and vanilla extract.
2️⃣ Pour in the melted chocolate mixture and stir until fully combined.
3️⃣ Sift in the gluten-free flour, cocoa powder, baking powder, and salt.
4️⃣ Gently fold the dry ingredients into the wet ingredients until you get a smooth batter.
Step 3: Bake the Lava Cakes
1️⃣ Divide the batter evenly between the prepared ramekins.
2️⃣ Bake for 10–12 minutes—the edges should be set, but the center should still be soft.
Step 4: Serve & Indulge
1️⃣ Let the cakes rest for 1–2 minutes, then carefully run a knife around the edges.
2️⃣ Flip onto a plate, dust with powdered sugar, and serve immediately with fresh berries or dairy-free ice cream.
