✅ Salt & black pepper, to taste
✅ Juice of ½ lime
For the Toppings:
✅ Small corn or flour tortillas, warmed
✅ Shredded lettuce
✅ Diced tomatoes
✅ Sliced avocado or guacamole
✅ Chopped fresh cilantro
✅ Vegan sour cream or dairy-free yogurt

Instructions
Step 1: Prepare the Taco Filling
1️⃣ Heat olive oil in a pan over medium heat.
2️⃣ Sauté the onion for 2–3 minutes until soft, then add the garlic and cook for another minute.
3️⃣ Stir in the chopped walnuts (or mushrooms) and cook for 5 minutes until slightly golden.
4️⃣ Add the lentils, tomato paste, soy sauce, and all spices (cumin, smoked paprika, chili powder, oregano, salt & pepper).
5️⃣ Stir well and let cook for 5–7 minutes, adding a splash of water if needed to prevent sticking.
6️⃣ Finish with a squeeze of lime juice for extra flavor!
Step 2: Assemble the Tacos
1️⃣ Warm the tortillas in a dry pan or over an open flame for a slight char.
2️⃣ Add a generous scoop of the taco filling into each tortilla.
3️⃣ Top with lettuce, tomatoes, avocado, fresh cilantro, and a drizzle of vegan sour cream.
4️⃣ Serve immediately with lime wedges on the side!
