Ingredients

For the Salad:

2 cups fresh corn kernels (or canned, drained)
1 cup cherry tomatoes, halved
½ cup red bell pepper, diced
½ cup cucumber, diced
¼ cup red onion, finely chopped
½ avocado, diced (optional for creaminess)
¼ cup fresh cilantro or parsley, chopped

For the Zesty Lime Dressing:

3 tbsp olive oil
2 tbsp fresh lime juice
1 tsp maple syrup (or agave for slight sweetness)
½ tsp garlic powder
½ tsp ground cumin
½ tsp salt
¼ tsp black pepper

Optional Add-Ins:

½ cup black beans (for extra protein)
1 small jalapeño, finely chopped (for a spicy kick)
