Ingredients

For the Salad:

8 oz spaghetti (regular or gluten-free)
1 cup cherry tomatoes, halved
½ cup cucumber, diced
½ cup red bell pepper, diced
¼ cup red onion, finely chopped
¼ cup black olives, sliced
¼ cup fresh parsley, chopped

For the Zesty Dressing:

¼ cup olive oil
2 tbsp red wine vinegar
1 tbsp lemon juice (freshly squeezed)
1 tsp Dijon mustard
1 clove garlic, minced
½ tsp dried oregano
½ tsp salt
¼ tsp black pepper

Optional Add-Ins:

1 tbsp capers (for extra tang)
½ tsp red pepper flakes (for a little heat)
¼ cup vegan feta cheese (crumbled)

Instructions

Step 1: Cook the Spaghetti

2️⃣ Cook the spaghetti until al dente, according to package instructions.
3️⃣ Drain, rinse under cold water, and set aside.

Step 2: Prepare the Dressing

1️⃣ In a small bowl, whisk together olive oil, red wine vinegar, lemon juice, Dijon mustard, minced garlic, oregano, salt, and black pepper.
2️⃣ Adjust seasoning to taste.

Step 3: Assemble the Salad

1️⃣ In a large mixing bowl, combine cooked spaghetti, cherry tomatoes, cucumber, bell pepper, red onion, black olives, and parsley.
2️⃣ Pour the zesty dressing over the top and toss until evenly coated.

Step 4: Chill & Serve

1️⃣ Let the salad chill in the refrigerator for at least 30 minutes for the flavors to meld.
