For the Spring Rolls:

  • 8 rice paper wrappers
  • 4 green leaf lettuce leaves, halved
  • 1 cup red cabbage, finely shredded
  • 1/3 English cucumber, julienned (1½-inch strips)
  • 1 large carrot, grated
  • 3/4 ripe avocado, thinly sliced
  • 3/4 red bell pepper, thinly sliced

For the Creamy Peanut Dipping Sauce:

  • 1/4 cup natural peanut butter
  • 2 tablespoons fresh lime juice
  • 2 tablespoons soy sauce (low sodium if preferred)
  • 1 tablespoon agave syrup (or maple syrup)
  • 1 teaspoon rice vinegar
  • 1/2 teaspoon chili garlic sauce (adjust to spice preference)


👩‍🍳 Step-by-Step Instructions




1. Make the Peanut Sauce

In a small bowl, whisk together the peanut butter, lime juice, soy sauce, agave, rice vinegar, and chili garlic sauce until smooth and creamy. Add a splash of warm water if needed to thin it out. Set aside.

2. Prepare Your Rolling Station

Fill a large, shallow bowl or pan with warm water. This will be used to soften the rice paper wrappers.

Have a clean, flat surface ready for rolling, along with all your prepped veggies within arm’s reach.

3. Soften the Rice Paper

Dip one sheet of rice paper into the warm water for about 10 seconds. It should become pliable but not overly soft. Carefully transfer to your work surface—it will continue softening as you assemble.

4. Add the Fillings

Place half a lettuce leaf in the center of the wrapper. On top of the lettuce, layer a small handful of red cabbage, a few cucumber sticks, grated carrot, 1–2 slices of avocado, and 2–3 strips of red bell pepper.

5. Roll It Up

Fold the sides of the wrapper inward like you’re making a burrito. Then roll tightly from the bottom up, keeping the filling snug. Repeat with the remaining wrappers and fillings.

6. Serve & Enjoy

Arrange the spring rolls on a plate and serve with the creamy peanut dipping sauce on the side. Slice them in half on a diagonal for extra visual appeal.
