What You’ll Need 🛒
- 2 cups full-fat coconut milk (for a rich, creamy base!)
- ½ cup unsweetened soy or cashew milk (adds smoothness!)
- 2 probiotic capsules (the secret to fermentation magic!)
- 1 tbsp lemon juice or apple cider vinegar (for that Greek yogurt tang!)
- Pinch of salt (to enhance the flavor!)
How to Make the Creamiest Vegan Greek Yogurt!
1️⃣ Blend & Heat
In a saucepan, whisk together the coconut milk, soy/cashew milk, and a pinch of salt. Heat gently until warm (but not boiling). Remove from heat and let cool slightly.
2️⃣ Add the Probiotics
Open the probiotic capsules and stir the powder into the mixture. Make sure it’s not too hot, or it will kill the probiotics!
3️⃣ Let It Ferment
Pour the mixture into a clean glass jar, cover with a cheesecloth, and let it sit in a warm spot for 12-24 hours to develop that delicious tangy flavor!
4️⃣ Chill & Thicken
Stir in lemon juice or apple cider vinegar, then refrigerate for at least 4 hours until it’s thick and creamy.
5️⃣ Stir & Serve!
Give it a good mix and enjoy as-is, with fruit and granola, or as a savory dip!
