How to Make the Best Vegan Pot Pie:
1️⃣ Prepare the Crust
In a bowl, combine flour and salt. Cut in vegan butter using a fork until the mixture resembles coarse crumbs. Slowly add ice water, 1 tbsp at a time, until a dough forms. Wrap and chill for 30 minutes.
2️⃣ Cook the Creamy Filling
- In a large pan, heat olive oil over medium heat. Sauté onions and garlic until soft (about 3-4 minutes).
- Stir in carrots, potatoes, green beans, and peas. Cook for 5 minutes.
- Sprinkle flour over the veggies and stir to coat. Gradually pour in vegetable broth and plant milk, stirring constantly until the mixture thickens (about 5-7 minutes).
- Season with thyme, rosemary, salt, and pepper.
3️⃣ Assemble the Pot Pie
Preheat your oven to 400°F (200°C).
- Roll out half the pie crust and line the bottom of a pie dish.
- Pour the creamy vegetable filling into the crust.
- Roll out the second half of the crust and cover the pie. Seal the edges and cut a few small slits on top for ventilation.
4️⃣ Bake Until Golden & Delicious
Brush the crust with a little plant milk for a beautiful golden sheen. Bake for 35-40 minutes until the crust is flaky and golden brown.
Let it cool slightly before serving—if you can wait!
