Quick Vegan Hemp Parmesan Meal Prep

One rainy afternoon, Lauren and I were preparing a hearty pasta dish, and we realized we were out of our usual vegan parmesan. Not wanting to run to the store, Lauren suggested we try making our own using ingredients we had on hand. She remembered reading about hemp seeds being a great base for vegan cheese, so we decided to give it a shot.

We gathered hemp seeds, nutritional yeast, garlic powder, and a pinch of salt. Lauren toasted the hemp seeds lightly to bring out their nutty flavor, while I measured out the other ingredients. We combined everything in a food processor and pulsed until we achieved a fine, crumbly texture. The result was a savory, cheesy topping that added the perfect finishing touch to our pasta. Instructions

  • Remove from heat and allow them to cool for a few minutes.

Blend the Ingredients

  • In a food processor or blender, combine the toasted hemp seeds, nutritional yeast, garlic powder, and salt.
  • Pulse until the mixture reaches a fine, crumbly consistency.
  • Taste and adjust the seasoning if necessary.

Store the Parmesan

  • Transfer the hemp parmesan to an airtight container and store it in the refrigerator.
  • It should keep well for up to three weeks.
