Instructions
1️⃣ Soften the Cashews: Soak the cashews in hot water for 10–15 minutes (or boil for 5 minutes). Drain and set aside.
2️⃣ Sauté the Garlic: In a small pan, heat olive oil or vegan butter over medium heat. Add the minced garlic and cook for 30 seconds until fragrant. Remove from heat.
3️⃣ Blend Until Creamy: In a high-speed blender, combine the soaked cashews, plant milk, nutritional yeast, lemon juice, sautéed garlic, salt, black pepper, onion powder, and Italian seasoning. Blend until completely smooth.
4️⃣ Adjust Consistency: Add ¼–½ cup water or vegetable broth while blending until you reach your desired thickness. The sauce should be rich and creamy, yet pourable.
5️⃣ Warm & Serve: Transfer the sauce back to the pan and warm over low heat for 2–3 minutes, stirring occasionally.
6️⃣ Toss & Enjoy: Pour over your favorite cooked pasta, stir to coat, and garnish with fresh parsley and vegan Parmesan!
