Instructions
Step 1: Melt the Chocolate

2️⃣ Once melted, let it cool slightly—it should be warm but not hot.
Step 2: Whip the Aquafaba
1️⃣ In a clean, dry mixing bowl, pour in the aquafaba and add the cream of tartar.
2️⃣ Using a hand mixer or stand mixer, whip on high speed for 5–7 minutes until stiff peaks form.
3️⃣ Add the maple syrup (or sugar), vanilla extract, and salt, then whip for another minute to combine.
Step 3: Fold in the Chocolate
1️⃣ Gently fold the melted chocolate into the whipped aquafaba using a spatula. Be careful not to deflate the mixture—use slow, gentle motions.
2️⃣ Continue folding until the mixture is uniformly chocolatey and fluffy.
Step 4: Chill & Set
1️⃣ Spoon the mousse into serving glasses or ramekins.
2️⃣ Refrigerate for at least 2 hours (or overnight) until set and airy.
