One summer evening, we had a few overripe mangoes on the counter and a serious craving for something cold and creamy. Lauren had the idea to throw them into the blender with a can of coconut milk she’d chilled the night before. Cassidy, of course, was on board in a heartbeat — she’s never one to say no to frozen desserts. Within minutes, we had something so velvety and tropical, we couldn’t believe it only took three ingredients.

Now it’s become a sort of tradition. Whenever we feel the heat creeping in, we make a fresh batch and stash it in the freezer. Lauren loves adding a splash of lime for a tangy twist, while Cassidy piles hers with coconut flakes and fresh mango chunks. It’s simple, easy, and one of those things we’ll probably make forever.
