The Best Vegan Greek Pasta Salad Recipe

It was one of those golden late-summer afternoons when Cassidy and I decided to host a spontaneous backyard lunch. We wanted something fresh, vibrant, and satisfying that could be whipped up quickly. Lauren suggested a Greek-inspired pasta salad, and within minutes, we were chopping veggies and boiling pasta. The result? Ingredients

  • pasta of choice (we love rotini)
  • cherry tomatoes
  • cucumber
  • fresh basil
  • vegan feta (optional)
  • sun-dried tomatoes
  • dried Italian herbs
  • garlic
  • kalamata olives
  • chickpeas
  • white wine vinegar or lemon juice
  • macadamia oil (or olive oil)
  • salt and pepper

Instructions

Cook the pasta

  • Boil your chosen pasta according to package instructions until al dente. 
  • Drain and set aside, tossing with a little olive oil to prevent sticking.

Prepare the vegetables

  • While the pasta cooks, chop the cherry tomatoes, cucumber, and fresh basil. 
  • Slice the sun-dried tomatoes and kalamata olives.
  • Rinse and drain the chickpeas.

Make the dressing

  • In a small bowl, whisk together white wine vinegar or lemon juice with macadamia oil.
  • Add minced garlic, dried Italian herbs, salt, and pepper. 
  • Mix until well combined.
