⅓ cup brown sugar (adjust for sweetness)
1 tsp vanilla extract
1 tsp cinnamon
1 tbsp cornstarch (for thickening)
1 tbsp lemon juice

For the Cobbler Topping:

1 cup all-purpose flour
¼ cup granulated sugar
1 tsp baking powder
¼ tsp salt
¼ cup cold vegan butter, cut into small pieces
½ cup dairy-free milk (soy, oat, or almond)
½ tsp vanilla extract

For Garnish:

Coconut sugar or cinnamon sugar (for a golden crust)
Dairy-free vanilla ice cream (optional but highly recommended!)


Instructions

Step 1: Prepare the Peaches

1️⃣ Preheat your oven to 375°F (190°C).
2️⃣ In a bowl, toss the peach slices with brown sugar, vanilla, cinnamon, cornstarch, and lemon juice.
3️⃣ Transfer to a lightly greased 9-inch baking dish and spread evenly.

Step 2: Make the Cobbler Topping

1️⃣ In a separate bowl, whisk together flour, sugar, baking powder, and salt.
2️⃣ Cut in the vegan butter using a fork or your fingers until the mixture resembles coarse crumbs.
